Island Style Quinoa & Beans

Rice can be very heavy. Quinoa is a great alternative to replace rice!



1 1/2 cups of quinoa⁣

1 cup of coconut milk ⁣

1 1/2 cup of veggie/chicken broth⁣

1 (15 oz) can of kidney beans⁣

2 bay leaves ⁣

5 sprigs of thyme⁣

1 medium-sized onion - diced ⁣

2 tbsp of garlic ⁣

1 teaspoon of tomato paste⁣

2 tablespoons of olive oil ⁣

1/4 teaspoon of cayenne pepper⁣

1 1/2 teaspoon of salt⁣

1 teaspoon of pepper ⁣


Rinse the quinoa and beans and set aside. Meanwhile heat up oil in a pot on medium-high heat.⁣

Next, add the onions and sauté until softened. Afterward, add the tomato paste, garlic, thyme, and bay leaves. Continue to sauté for about 2 more minutes.⁣

Afterward, add the quinoa, beans, and seasonings and stir for about 1 minute. Continue, by adding the coconut milk and stock. ⁣

Bring to a boil, while continuing to stir and then bring to a simmer. Cover and cook for about 25 minutes on low heat. When finished fork the quinoa to fluff up and serve!⁣
