Haitian Epis Marinade

Marinades are central to every culture and work to elevate dishes. In my Haitian culture, we use a marinade called Epis. This marinade is used in many dishes such as our rice, meats, etc. Try out this recipe for your next marinade!




𝐇𝐚𝐢𝐭𝐢𝐚𝐧 𝐄𝐩𝐢𝐬 ⁣

1 Onion⁣

2 Celery Stalks⁣

1 Red Pepper⁣

1 Scotch Bonnet ⁣

2 Scallion Stalks ⁣

6 Tbsp of Garlic⁣

1 Lime⁣ 1 Cup Cilantro⁣

5 Thyme Sprigs⁣

1/2 Cup of Parsley⁣

1 Tbsp of Vinegar ⁣

1/2 Cup Olive Oil⁣ (add more if having difficulty blending)

1 Bouillon Cube⁣

1 Tsp of Cayenne Pepper⁣

1 Tsp of Whole Cloves⁣

Chop all of the vegetables. Combine all ingredients into a blender and blend until it resembles a sauce-like consistency. ⁣If you are having difficulty blending add more olive oil.
