Marinades are central to every culture and work to elevate dishes. In my Haitian culture, we use a marinade called Epis. This marinade is used in many dishes such as our rice, meats, etc. Try out this recipe for your next marinade!

𝐇𝐚𝐢𝐭𝐢𝐚𝐧 𝐄𝐩𝐢𝐬
1 Onion
2 Celery Stalks
1 Red Pepper
1 Scotch Bonnet
2 Scallion Stalks
6 Tbsp of Garlic
1 Lime 1 Cup Cilantro
5 Thyme Sprigs
1/2 Cup of Parsley
1 Tbsp of Vinegar
1/2 Cup Olive Oil (add more if having difficulty blending)
1 Bouillon Cube
1 Tsp of Cayenne Pepper
1 Tsp of Whole Cloves
Chop all of the vegetables. Combine all ingredients into a blender and blend until it resembles a sauce-like consistency. If you are having difficulty blending add more olive oil.
