Haitian Epis Marinade

Marinades are central to every culture and work to elevate dishes. In my Haitian culture, we use a marinade called Epis. This marinade is used in many dishes such as our rice, meats, etc. Try out this recipe for your next marinade!

1 Onionā£

2 Celery Stalksā£

1 Red Pepperā£

1 Scotch Bonnet ā£

2 Scallion Stalks ā£

6 Tbsp of Garlicā£

1 Limeā£ 1 Cup Cilantroā£

5 Thyme Sprigsā£

1/2 Cup of Parsleyā£

1 Tbsp of Vinegar ā£

1/2 Cup Olive Oilā£ (add more if having difficulty blending)

1 Bouillon Cubeā£

1 Tsp of Cayenne Pepperā£

1 Tsp of Whole Clovesā£

ā£

Chop all of the vegetables. Combine all ingredients into a blender and blend until it resembles a sauce-like consistency. ā£If you are having difficulty blending add more olive oil.
