An easy lunch or dinner recipe to add to your repertoire when you are craving comforting and creamy macaroni and cheese.

Boxed mac and cheese was probably the first thing that I learned how to cook as a child. Even as I enter adulthood this is still one of my favorite dishes. I usually have all the ingredients needed to make mac and cheese sitting in my fridge or in my pantry. This is one of my go-to recipes for something quick and comforting.
Ingredients:
3 Tbsp of Butter
2 Tbsp of All-Purpose Flour
1 & 1/2 Cups of Chicken/Vegetable Stock
2 Cups of Heavy Cream
1/2 Tsp of Salt
1/2 Tsp of Black Pepper
1/4 Tsp of Cajun Seasoning
1/2 lb of Shells Pasta
8 oz of Sharp Cheddar - Cubed
4 oz of Cheddar - Shredded
Turn heat on medium. Melt butter and add flour. Whisk until combined.
Next, add heavy cream, stock, seasonings, pasta, and cubed cheddar. Continue to stir. Cover pot and bring to a boil. Once it reaches a boil, continuously stir. The liquid will slowly evaporate. Cook until the pasta is cooked to your desired bite, about 15 minutes. Lastly, add in the shredded cheddar and stir until it is melted and combined, and then serve!
