I am always experimenting while in the kitchen. One day, while making guac I decided to throw in some canned pineapple from my pantry into the mix. If you are like me and love sweet and spicy combinations this recipe is for you!

Serves: 2
Ingredients:
1 Ripe Avocado
1/2 Lime
1 Jalapeño (Medium Diced/Seeds Removed)
1/8 Cup of Cilantro (Chopped)
1/4 Tsp of Garlic Powder
1/4 Tsp of Red Pepper Flakes
1/2 Tsp of Cayenne
1/2 Tsp of Pepper
Salt (To Taste)
1/8 Cup of Canned Diced Pineapples (Rinsed)
1/8 Cup of Red Onion (Optional)
Oil for Frying
Place a small pan on medium-high. Add chopped jalapeños and fry for about 3 minutes or until the edges begin to brown. Strain excess oil on a paper towel.
In a bowl add avocado, lime juice, cilantro, and seasonings and mash until chunky. Next combine pineapples, red onion, and fried jalapeños and serve!
If you want to make homemade tortilla chips. Cut a flour tortilla into 8 equal pieces. Fry on medium-high heat for less than 1 minute on each side. When the tortilla begins to bubble you will know its ready to flip. Strain excess oil on a paper towel and sprinkle with salt.
