Lychee Piña Colada Popsicles

Growing up, popsicles were my favorite treat to have in the summer months. In a weird way, popsicles helped build community in the neighborhood I grew up in. There were always neighbors that kept popsicles in the freezer for us little kids. Popsicles are very easy to make and are very customizable.



This popsicle recipe is inspired by one of my favorite drinks - the piña colada. I also used lychee in this recipe which is one of my go-to summer fruits. Lychees remind me of another fruit called guinep that is very popular in my Caribbean culture.

Makes 6-8 Popsicles

Ingredients:

18 Fresh Lychees

2 Heaping Cups of Fresh Pineapple

1 Can of Coconut Milk (13.5 oz)

1/4 Cup of Dark Rum

1/8 tsp of Vanilla

1/8 tsp of Nutmeg

1 Tbsp of Honey


Deseed the lychee fruits. Cut a fresh pineapple into chunks suitable for a blender. Using a blender, blend all of the ingredients together. Next, use a strainer to strain the popsicle mixture.


Pour the strained popsicle mixture into the popsicle molds. Freeze for at least 8 hours. Enjoy!
