A quick, easy, and budget-friendly breakfast dish to add to your breakfast rotation!

Ingredients:
1 egg
1 tortilla (I used a habanero tortilla to give it a kick!)
1 tbsp of olive oil
Pinch of salt and pepper
1 tbsp of salsa
1/8 cup of shredded Mexican blend cheese
2 slices of avocado (optional because we all know avocados can be expensive!)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Heat a non-stick pan on medium heat. Add olive oil. Next, add your tortilla while the pan is still heating up. Afterward, add your cheese on top of the tortilla and form a well w/ the cheese to hold your egg. Next crack the egg in that well. It’s okay if a little bit of the egg spills out.
Next, add a pinch of salt and pepper to the egg. Cover the pan and let cook until the egg white of your egg is cooked.
Next, flip the tortilla egg over and cook for about 30 seconds - 1 minute depending on how soft you want your yolk to be. Afterward, remove the tortilla egg from the pan and spoon salsa on the top and served with avocado on the side.
