Traditional pesto can be so expensive because of the cost of pine nuts and fresh basil. This recipe is an affordable and equally delicious take on pesto pasta! Asparagus is a great alternative to basil when you are looking to create a creamy pesto!

Ingredients:
1 & 1/2 cup asparagus white ends cut off
2 tbsp garlic
3/4 cup olive oil
1/4 cup fresh squeezed lemon juice
1 cup parmesan
1 cup ricotta
1 & 1/2 tsp salt
2 tsp pepper
1 tsp red pepper flakes
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Cut asparagus into small pieces suitable for your blender. Mince the garlic.
Add asparagus, garlic, and 1/2 portion of your olive oil and blend using the pulse button on the blender. Once the asparagus is blended add the parmesan, ricotta, and lemon juice and continue to blend until the mixture resembles a creamy consistency.
Add salt, pepper, red pepper flakes to taste. If the pesto seems like it needs more flavor, continue to season with your favorite spices.
Lastly, serve over your favorite pasta or on a sandwich as a spread.
